Spain-Annatto Oil
2 cups Vegetable oil
1 cup Annatto seeds
Place the oil in a 2-quart heavy saucepan and heat to about 350 degrees.
Add the annatto seeds and remove the pan from the heat.
Allow to cool and strain the oil in to a glass jar.
Makes 2 cups.
